Smoked Jalapeno Popper Pork Roast Recipe

- 1 (3 lb./1.5 kg) boneless center cut pork loin roast
- 3 tbsp. (84 g) favorite barbecue seasoning
- 1 pkg (8 oz./250 g) cream cheese, softened
- 4 jalapeno peppers, seeded, minced
- 2 cloves garlic, minced
- 6 slices bacon, cooked crisp, crumbled
- 1 cup (113 g) shredded cheese (sharp cheddar/Monterey jack)
- Smoking wood chips and Smoker box
- Butcher’s twine
- Soak some wood chips and fill the Napoleon Stainless Steel Smoker Box (click here to find out how to smoke on your barbecue). Remove the cooking grids and a sear plate and replace the sear plate with the smoker box.
- Preheat your barbecue to 450°F (232°C) setting the burners that are not below the smoker box to medium-high and the one below the smoker box, to low.
- Butterfly the pork, opening it up like a book and season both sides well with your favorite BBQ seasoning.
- In a bowl combine the cream cheese, jalapeno, garlic, bacon and 2/3 of the shredded cheese. Spread the cream cheese mixture on the pork. Roll it up tightly and secure in several places with butcher’s twine.
- Sear the pork on all sides over direct, high heat, then turn hot burners down to medium-low and close the barbecue, cooking the pork for about 20 minutes, then topping it with the remaining cheese. Cook an additional 10 minutes or until an instant-read meat thermometer reaches 140°F (60°C).
- Remove from the grill and rest for 10 minutes before slicing and serving with your favorite side dishes.
