Vegan Mushroom Pulled Pork Recipe
This recipe for Vegan Mushroom Pulled Pork came about when I became so impressed with the pulled texture of the Vegan Tacos Birria that I figured the same thing was possible to make pulled pork. To create a deep, smoky flavor, I’ve smoked the mushrooms first. Once they’re cooled enough to handle, they’re shredded and caramelized in vegan BBQ sauce to finish. Served on a bun with your favorite slaw recipe, these vegan mushroom pulled pork sandwiches will up the game and increase the inclusive menu offerings for your next barbecue.

1 lb. trumpet or oyster mushrooms
apple, maple, or cherry wood chips
2 tbsp. oil
1 cup vegan friendly BBQ sauce
4 rolls
vegan friendly slaw for serving
- Soak a generous two cups of wood chips in water. Fill a foil pack or smoker box/tube with the soaked wood chips. Place the filled smoker onto the barbecue. Preheat to 400°F.
PRO TIP: While it is not necessary to soak wood chips before a smoke, in this case, you are preventing the chips from being used up while the barbecue is heating. The water will create steam and protect the chips from igniting before the grill is hot enough. - Once the chips start smoking and the barbecue is hot enough, place the washed mushrooms onto the top rack, or over indirect heat, and allow them to smoke for up to 20 minutes.
- Turn down the barbecue. Remove the mushrooms from the rack. Allow them to cool until you can handle them. Then, shred the mushrooms using a fork.
- Place an oven-safe pan onto the barbecue (or preheat the side burner), add the oil, and, once hot, add the mushrooms. Toss the mushrooms in the oil and add barbecue sauce. Continue to cook over direct heat until the sauce begins to caramelize. You can do this over the main burners of the grill, or you can use the infrared sear station side burner for this.
- While the mushrooms are caramelizing, brush the buns with your favorite neutral oil or vegan margarine. Grill the buns over direct heat until crisp.
- Serve the pulled mushrooms on a bun with the vegan-friendly slaw.
