Ingredients
  • 2 brown oyster mushroom clusters (can be labelled blue oyster too)
  • Oil, canola or other flavor neutral
  • 2 tbsp. (14 g) favorite BBQ seasoning
  • ½ cup (118 ml) favorite BBQ sauce
  • Salt to taste
Method
  1. Place a cast-iron frying pan on the cooking grids and preheat your grill to medium-high by lighting the two burners below the griddle/pan.
  2. Trim the mushroom cluster, removing just the part where it was in the ground being careful not to trim too much. You want the whole cluster to stay together.
  3. Pour your BBQ sauce into a bowl and set it aside.
  4. Using heat-resistant gloves, move the cast iron frying pan out of the way. Brush the cooking grids with oil. Place the mushrooms, stem side down, directly onto the grids to cook.
  5. Press mushrooms with the cast iron pan and let them sit for 3 to 5 minutes, cooking. Remove the pan, dry the bottom off.
  6. Season the top of the mushrooms well with your favorite BBQ rub. Flip the mushrooms and press again, using the towel you used to dry off the cast iron pan to put a little more downward force to squeeze out as much moisture as possible.
  7. Cook for another 3 to 5 minutes. Remove the cast iron pan and season the second side of the mushrooms well with BBQ rub. Continue cooking until both sides are nice and crispy, you may consider flipping and adding more oil. The more crispy bits the better.
  8. Once sufficiently grill-marked and flattened, begin brushing the mushrooms with the barbecue sauce.
  9. Continue to grill the mushrooms over direct heat until the BBQ sauce caramelizes. Keep in mind that this will make a bit of a mess of your barbecue, but it’s completely worth it.
  10. Remove the mushrooms from the barbecue, slice, and serve with your favorite vegan sides like these flavorful crispy potatoes

Inspired by @Dereksarno’s recipe, these giant mushrooms are super friendly! Grill these Vegan Mushroom Steaks on the barbecue tonight for an arm-waving taste experience. If you can't get larger clusters, smaller clusters can be put onto buns and topped with your favorites, like a brussels sprout slaw, for a delightful burger.  What are your favorite recipes to grill on your barbecue?
