Bacon Wrapped Filet Mignon Recipe

By: Andrea Alden

Fancy meals don’t get easier than these Bacon Wrapped Filet Mignon steaks. Originally made in August of 2015, this recipe was a quick meal to celebrate a new house. We didn’t have a working fridge, and were literally living out of a cooler and using the TravelQ™ for any and all cooking. At the time, it felt like life and this new house were being held together with duct tape, kind of like the filet mignons. However, that just goes to show you that with just a couple ingredients and very little time spent, you have a fancy meal that everyone will enjoy. Bacon Wrapped Filet Mignon is hard to mess up. Tenderloin remains fairly tender, even when a little overcooked – though I never recommend cooking a steak past medium. Serve this with a light salad when the days are hot for a refreshing meal, or with more hearty grilled veggies and some baked potatoes.

Ingredients

4 filet

mignon steaks

4 slices

of thick cut, smoked bacon

4 tsp.

dijon mustard

1 dash

Your favorite steak seasoning to taste

Method
  1. Preheat your grill to high, 500°F, using two burners.
  2. Season your filets with your favorite steak spice. Take the bacon and spread 1 tsp. of dijon mustard on each. Wrap the bacon around each filet and fasten with a toothpick.
  3. Sear your wrapped filets for 1 to 2 minutes then turn the steak 45° using tongs. Continue grilling for another minute. Flip your steaks and repeat for the other side.
  4. Once the filets are seared, turn your grill down to medium low, and move them to the off side of the grill. Continue grilling using indirect heat for 5 to 7 minutes, or until the touch test (tip of the middle finger to tip of the thumb, touch the pad of the thumb) says that your filets are medium.
  5. Remove the steaks from the grill and let them rest under foil for 5 to 10 minutes before serving with your favorite BBQ side dishes

The most economical way to find yourself with Filet Mignon is to buy a whole beef tenderloin when it is on sale and to cut it up on your own. This will give you a couple of roasts and a plethora of steaks to enjoy. If you haven’t seen tenderloin on sale recently, or just had a craving, that’s alright. Your butcher will happily cut you some filets to the thickness you desire as well. What will you serve with your Bacon Wrapped Filet?
