- 6 chicken thighs
- 2 (4 tbsp. / 48 g) packet fajita seasoning
- 1 can (350 ml) Mexican beer
- 1 lime, juiced
- 4 cloves garlic, crushed or grated
- 2 sweet bell peppers
- optional hot peppers
- 1 yellow onion
- 4 tbsp. high-temp oil
- Salt to taste
To Serve
- Flour or corn tortillas
- Lime wedges
- Shredded cheese
- Cilantro
- Crema
- Salsa
- At least 30 minutes before you are ready to cook, up to 8 hours before, whisk together 1 packet of fajita seasoning, beer, a little lime juice, and half of the garlic. Slice the chicken into strips and toss in the marinade.
- Slice the peppers and onions. Toss them with a squeeze of lime juice, the remaining garlic, and salt to taste.
- Preheat the griddle to 400°F (200°C). Add some high-temperature oil.
- Sear the chicken, removing it from the marinade and discarding the marinade. Separately, add more oil and cook the vegetables.
- Cook both until lightly charred. The vegetables should begin to soften and the chicken should read about 155°F (68°C). At this point, you can combine them or keep them separate for serving. Feel free to warm the tortillas on the griddle before serving as well.
- Pile your tortillas with chicken, veggies, and your favorite toppings to serve.
