Imagine a prime rib roast surrounded by beef marrow bones, lightly smoked and seared to perfection while being infused with flavor from the cut bones.   • 6 to 8 marrow bones, halved (Canoe cut)
  • 1 cup (288 g) kosher salt
  • 2 gallons (38 cups, 9 liters) water
  • 6 lb (2.7 kg) or 4-rib prime rib roast, boneless
  • ¼ cup (34 g) your favorite beef barbecue seasoning
  • 2 cups (500 ml) water
  • Wood for smoking, oak, maple, hickory, apple
Method
  1. The day before, mix half of the salt with half of the water, stirring until the salt is dissolved. Submerge the bones and allow them to soak. Repeat, changing the water out for fresh water after about 12 hours. 
  2. When you are ready to cook, remove the bones from the water and pat them dry. Preheat the barbecue to 300°F (148°C) preparing to use the indirect grilling method. 
  3. Season the roast thoroughly with your favorite barbecue rub for beef. Place the bones around the roast, marrow side in, and tie in place with butcher’s twine. 
  4. Place the roast onto the barbecue, over a drip tray filled with water. For extra flavor, place wood chips or chunks into a smoker box, pipe, or foil wrap, over a lit burner. 
  5. Cook/smoke the roast until an internal temperature of 110°F (43°C). Remove the roast from the barbecue and preheat the infrared sear station or main burners for at least 5 minutes.
  6. Sear the roast on the two open ends until sear marks form, 1 to 3 minutes per side, then rest for at least 30 minutes. If there are large flare-ups, they can burn the butcher's twine holding the bones. You may also choose to remove the bones before searing, this is also acceptable. 
  7. Remove the bones, then slice and serve with your favorite holiday side dishes like potatoes and vegetables. Use the marrow from the bones as a spread on some crusty bread, to add extra flavor to the veggies and potatoes.  
  8. Don’t forget to use the drippings to create the best beef gravy ever.
