White Sauce
- 2 tbsp. unsalted butter
- ¼ tsp. black pepper
- 3 cloves garlic, grated
- 2 tbsp. all-purpose flour
- 1¼ cup (312.5 ml) cream
- 1 cup (85 g) parmesan cheese, freshly grated
- Salt to taste
Pizza
- 1 package premade pizza dough
- 3 tbsp. cornmeal
- 2 tbsp. garlic oil
- ½ cup (100 g) mozzarella, shredded
- 2 (142 g) hot Italian sausages crumbled and cooked
- 5 oz (142 g) pepperoni slices
- ¼ red onion sliced thin
- Raw honey to finish
- Chopped olives to finish
- Bring the dough out of the fridge and allow it to come to room temperature as per the manufacturer’s instructions.
- In a saucepan over low heat, melt the butter and steep the pepper and garlic in the butter while it melts. Whisk in the flour and allow it to cook until the raw flour smell is gone. A little at a time, add the cream, whisking between additions until the cream begins to steam. Then, slowly add the parmesan, whisking until melted and the sauce is thick. Taste and season with salt as needed.
- Place the pizza stone onto the grill over direct heat and begin preheating the grill to between 450°F+ (232°C+).
- While the barbecue is preheating, shred the cheese, cook the sausage, slice the onions and begin rolling out the dough on a floured work surface. Once the barbecue is hot, sprinkle a pizza spatula and the pizza stone with cornmeal and lay the rolled-out dough onto the pizza stone. Brush the crust with the garlic oil.
- Bake the dough for a few minutes, until the bottom is a little crispy. Flip the dough over and spread a layer of white sauce and top with the shredded mozzarella cheese. Top the cheese with pepperoni slices, sliced red onion, and scatter over the crumbled sausage. Add any remaining cheese and close the lid, baking until the crust is crisp, and cheese is bubbling.
- Remove the pizza from the barbecue, leaving the stone. Allow the stone and grill to cool together.
- Slice the pizza into portions and top with a drizzle of honey and a sprinkling of chopped olives.
- Serve this with a high-acid white wine like Chablis or try a Yuengling American-style lager.
