How To Grill an Australian Wagyu Steak

We’ve tried a few different kinds of wagyu recently, and while there is nothing like the experience of enjoying a full Japanese A5 Wagyu Steak, you cannot eat much of it due to the richness of the delicate meat. That is where Australian Wagyu steaks come in. Imagine the robust quality of a steak with succulent striations of marbling that allow you to almost eat your meal with a spoon. An Australian Wagyu Ribeye steak tastes like beef turned up to 11. But, how do you grill an Australian Wagyu Steak? Keep reading to find out how to easily barbecue this precious piece of meat.

  1. Salt the steak to taste on both sides generously. Allow the steak to rest in the fridge for at least 40 minutes. 
  2. Preheat the barbecue to 300°F (149°C) preparing to use the indirect grilling method. You can use the warming rack or place the steak between lit burners, away from direct heat. 
  3. When the grill is hot, remove the steak from the fridge and season with pepper before placing onto the barbecue. Cook using indirect heat for 45 minutes up to 60 minutes depending on the outdoor temperature and thickness of your steak. Use a wireless digital meat thermometer to monitor the temperature of your steak and cook it to about 10°F less than your ideal internal temperature – for wagyu, that is about 120°F (49°C) - rare. 
  4. Remove your steak from the barbecue and allow it to rest while you preheat your infrared sear station or main grill to high. 
  5. Once up to temperature, sear your steak over direct, high heat, until sear marks have formed. About 60 seconds on each side, turn 90-degrees and sear a further 60 seconds for cross hatch sear marks. 
  6. Serve this perfectly grilled Australian Wagyu Ribeye steak with some finishing salt and your favorite side dishes, like potatoes and seasonal vegetables.
