Thai-Mex Tequila Spritz: The Perfect Cocktail for National Fajita Day

By: Andrea Alden

Every great meal deserves a great drink, and this Thai-Mex Tequila Spritz was made to accompany sizzling Thai Curry Fajitas with Peanut Sauce and Mango Salsa. Combining smoky tequila with bright citrus, aromatic bitters, and the tropical sweetness of Jarritos soda, this refreshing cocktail bridges the gap between Mexican and Thai-inspired flavours.

Quick to prepare and easy to enjoy, this sparkling cocktail delivers just enough complexity to complement the rich curry spices, creamy peanut sauce, and fresh mango salsa without overwhelming them. Whether you're celebrating National Fajita Day on the patio or hosting a summer cookout, this refreshing sipper is a perfect match.

Ingredients
  • 1½ oz (45ml) tequila
  • ½ oz (15ml) lemon juice
  • 2 dashes Angostura bitters
  • 3½ oz (104ml) Jarritos soda, mango, mandarin, or lime
  • Lemon peel, for garnish
Method
  1. Prepare your shaker. Fill a cocktail shaker about halfway with ice. Plenty of ice will help chill the drink quickly and ensure everything is perfectly blended.
  2. Add the ingredients. Pour in the tequila, fresh lemon juice, and bitters. The citrus brings brightness while the bitters add a subtle depth that ties the whole cocktail together.
  3. Shake it up. Secure the lid and shake vigorously for 10 to 15 seconds, or until the outside of the shaker feels frosty and cold. A good shake creates a beautifully chilled and balanced cocktail.
  4. Build the drink. Fill a rocks glass with fresh ice and pour in the Jarritos. Slowly strain the tequila mixture over top, allowing the flavours to mingle while preserving some of the soda’s lively fizz.
  5. Add the finishing touch. Garnish with a strip of citrus peel. Give it a gentle twist over the glass first to release the fragrant oils, then drop it in or rest it on the rim for a bright and refreshing aroma with every sip.
  6. Sip and enjoy. Serve immediately and enjoy this crisp, citrusy cocktail while it’s ice cold. Perfect for backyard gatherings, taco nights, or whenever you’re in the mood for something refreshing and easy to make.

The best food pairings enhance every flavour on the plate, and this Thai-Mex Tequila Spritz does exactly that. Smoky, citrusy, and lightly sweet, it refreshes the palate between bites while highlighting the bold fusion flavours of your meal. Serve ice cold alongside your favourite fajitas and enjoy a cocktail that proves some of the most memorable combinations come from bringing different culinary traditions together.
