Romantic T-Bone Steak with Bacon Potato Roses Recipe

  • 1 large, thick cut, T-Bone steak
  • Salt pepper and garlic powder to taste
  • 2 yukon gold potatoes, sliced to 1/8 inch (3 mm)
  • 2 tbsp. (30 ml) butter, melted
  • 6 to 8 slices bacon
  • 1 tbsp. (6 g) your favorite mixed herbs
  • Salt to taste
  • Butter or nonstick for greasing

Compound Butter

  • ¼ cup (½ stick /85 g) butter, softened
  • ¼ cup (56 g) crumbled blue cheese
  • Freshly ground black pepper to taste
Method
  1. Prepare the steak the day before by salting it generously and place the steak on a rack over a plate or rimmed baking sheet. This is a process called dry brining. 
  2. In a bowl, combine the butter, crumbled cheese, and a generous grind or three of black pepper. Transfer the compound butter to some plastic wrap or a small Tupperware. Refrigerate until needed.
  3. When you are ready to begin preparing the rest of the meal, bring the steak out of the fridge to rest. Slice the potatoes to 1/8-inch thick (3 mm) thick slices. 
  4. Before assembling the potatoes, start the barbecue. Preheat the grill to 300°F (149°C), igniting one or two burners at either end of the barbecue, leaving the ones in the middle off. An indirect setup. 
  5. Butter or spray a muffin tin and set aside. Toss the potatoes with melted butter, your favorite mixed herbs, and season with salt to taste. Lay down one to two slices of bacon flat and then layer sliced potatoes on top. Roll the potatoes up like a cinnamon roll. Place the rolled-up potatoes into the prepared muffin tin. Cover with tinfoil.
  6. Insert the probes of a wireless digital meat thermometer into the bottom of the strip side and into the middle of the tenderloin side of the meat. Place the beef over the unlit barbecue burners with the fat cap of the strip closest to a lit burner. Place the potatoes fairly close to, but not quite directly over a lit burner. You can add wood chips or chunks in the appropriate vessel for additional flavor at this time. 
  7. Cook the steak for about 30 minutes or until it reaches around 80°F (27°C). Then flip it over, leaving the steak in the same orientation, with the fat cap facing the heat. Do the same with the potatoes, spinning them so that the side furthest from the heat is now facing the heat. Continue cooking until an internal temperature of between 110°F (43°C) and 120°F (49°C). 
  8. Remove the steak from the barbecue and turn up the heat. If the current lit burners are at full blast, turn on another burner and get the temperature up to 400°F (200°C) and remove the foil. 
  9. Rest the steak on a board. Preheat your infrared sear station side burner (if available) to high or wait for the main grids to finish heating. Sear the steak over direct heat until grill marks form. Allow the potatoes to finish cooking, testing the middle with a toothpick to ensure doneness. 
  10. Slice the steak artfully and arrange potatoes beautifully on a platter. Top the steak with the compound butter and serve with seasonal vegetables or a salad and a cabernet or shiraz.
