  • 2 lb. (907 g) lean ground beef
  • Salt, pepper, and garlic powder to taste
  • 1 tsp. yellow mustard
  • 12 slices American cheese
  • 8 slices bacon
  • 4 buns
  • Butter to taste
  • Parchment paper
Method
  1. It is best to keep the meat as cold as possible when making any kind of burger. Break the meat up and roll it into 4 oz. (113 g) balls. Refrigerate until you are ready to cook.
  2. Preheat all burners of the griddle to 400°F (200°C).
  3. Cook the bacon until your desired doneness, preferably crispy. Remove from the griddle and wrap in paper towel to drain and keep warm.
  4. Place the patties onto the griddle and allow them to begin cooking as they are. Season thoroughly. Then, using parchment paper and a spatula, smash them until they are, at the most, ½ inch (1.3 cm) thick. Cook for another 1 to 2 minutes, or until the edges are looking crispy, before adding a little mustard and flipping the burgers. Cook again for 1 to 2 minutes.
  5. Season and top the burgers with cheese before Removing them from the griddle to rest.
  6. Griddle the cut side of the burger buns, then flip the bottom bun over and top it with cheese, and bacon slices, followed by a double stack of patties. Add the top bun, upside down, and press down firmly.
  7. Serve these with your favorite condiments, like BBQ sauce, or ketchup. Pair with a Syrah red wine or try a creamy witbier.
