How to Grill Using a Rotisserie Without a Rear Burner
There is nothing more delicious than a juicy meal prepared using your grill and the rotisserie. However, if you have a Napoleon or any other BBQ without a rotisserie burner, you may feel like you are missing out on a great way of preparing meals. Can you use your grill to cook a rotisserie meal without using a rear burner? Let’s explore how to set up your grill for using a rotisserie when you don’t have a rear burner.
Why BBQ Using a Rotisserie?
First of all, why do you even want to BBQ using a rotisserie? That’s easy! Who doesn’t want to eat an amazing meal that has been basted in its own juices as it spins on the spit? Not only is the meat juicier, but you can add the incredible flavor of smoke if you add a smoker tube and your favorite wood chips to the mix.
Using a Rotisserie with the Main Burners
Setting up is very easy when you have three or more burners. It uses the same principle as indirect grilling and roasting. The idea is that you cook the food without direct heat below. See the following steps for setting up:
Preheat your BBQ by turning on the two outside burners, leaving the one(s) in the middle off. Your goal temperature is around 350°F. If you are cooking something larger, you may have to remove the cooking grids. Please do so before starting the grill. To get the grill up to temperature faster, you can turn on all of the burners; just remember to turn the ones directly below the food off before you put the food onto the barbecue.
Prepare the food you want to cook rotisserie style, slide on one set of forks, and slide the food onto the spit, securing with the forks. Add the second set of forks, and balance the rotisserie.
Position your rotisserie onto the grill, making sure that the spit rod is housed properly in the motor before turning it on.
Place a drip try under the food you are grilling to ensure that all the delicious drippings are captured so you can make gravy and keep your BBQ clean. Add a few cups of stock, wine, beer, or even water and herbs to this tray. This will produce steam that will keep things moist and leaving the tray easier to clean.
Bonus Round! If you want to have crispy outsides on your food, carefully remove the drip tray when the food is very nearly done. Light the burners below the food on your rotisserie and set them to high. Allow the food to continue cooking for 10 to 15 minutes – until the outside has a lovely crust.
