- 2 very ripe bananas
- 2 eggs
- 1 tsp. (5 ml) vanilla
- ½ cup (113 g) butter +2 tbsp. (28 g) for greasing
- 1 cup (120 g) white sugar
- ½ cup (220 g) brown sugar
- 2 cups (240 g) flour
- ½ tsp. (3 g) salt
- 1 tsp. (4 g) baking soda
- 1 tsp. (4 g) baking powder
- 1 tsp. (3 g) cinnamon
- Optional chocolate chips, raisins or nuts to taste
- Preheat your grill to 350°F (177°C), preparing to use indirect heat. Place the cast iron pan into the barbecue to preheat while you assemble the ingredients.
- Mash the bananas and mix in the eggs and vanilla.
- Using a hand mixer or your own muscles, cream together ½ cup of butter and the sugars until they are light and fluffy. Fold in the egg and banana mixture.
- Sift or whisk together the dry ingredients together and then stir gently until the dry ingredients are hydrated and no lumps are left. You can fold in your optional ingredients now.
- Remove the cast iron skillet from the barbecue and melt the 2 tbsp. of butter in the pan. Pour the batter over the melted butter. You can scatter the optional ingredients on top instead of mixing them in.
- Bake on the barbecue using indirect heat for 30 to 60minutes or until a toothpick or cake tester comes out clean.
- Allow the banana bread to cool a little before slicing and serving.
