- 1 ½ lb. (650 g) pork belly
- ¼ cup (32 g) BBQ pork or rib seasoning*
- ½ cup (64 g) Cider Sauce
- Waffles for serving
*Make sure to have something with a little brown sugar in it for great caramelization
Waffle Recipe
- 2¼ cups (270 g) all-purpose flour
- ¼ cup (50 g) granulated sugar
- 1 tbsp. baking powder
- ¾ tsp. salt
- 2 cups (500 ml) milk
- ½ cup (113g) unsalted butter melted
- 2 large eggs
- 2 tsp. vanilla extract
- Remove the skin and slice the pork belly into strips no thicker than half an inch. If your butcher can’t do this for you, place the belly in the freezer for 20 minutes to an hour and then slice.
- Season the belly with your BBQ seasoning on all sides.
- Preheat your barbecue to high, 400°F (200°C), igniting all but one burner to leave a cool zone in case of flareups.
- While waiting for the grill to warm, make your waffles using your favorite method. You can use Eggos, or you can use your favorite batter and a waffle iron. Place the completed waffles onto a wire rack and keep them warm in the oven or on your warming rack on the grill.
- Sear the pork over direct heat until grill marks form, flip, and repeat for the other side. Then, begin basting the slices of pork, flipping frequently to prevent the sauce from burning. If you are getting excessive flare-ups, move the pork to the cool zone for a minute or two.
- Once all of your pork slices are grilled up, serve them piled high on a bed of waffles with extra Cider Syrup drizzled over top.

- Grease the hot waffle iron with butter or cooking spray. Add about ⅓ cup of batter for each waffle to the hot waffle iron. The amount will depend on the size of your waffle maker, so, feel free to experiment with how much batter you add to the waffle iron.
- Cook the waffles until they are golden brown. Place the cooked ones on a wire rack until you are ready to serve so they stay crisp.
