- 1 extra thick ribeye, butterflied
- Salt to taste
- Freshly ground black pepper to taste
- Dehydrated garlic to taste
Easy Homemade Chermoula
- ½ cup (8 g) cilantro leaves
- ½ cup (8 g) parsley leaves
- 3 cloves garlic, peeled
- 1 spicy chili or to taste
- ½ cup (125 ml) lemon juice
- ½ tbsp. paprika
- 2 tsp. cumin
- ½ cup olive oil
- Salt to taste
- The day before, or up to 40 minutes before, season the steak thoroughly on all sides with salt. Place the steak onto a wire rack over a baking tray and allow it to dry brine.
- For the chermoula, using a food processor, pulse the cilantro, parsley, garlic, and chili in a food processor until they are finely chopped. Add the lemon juice, paprika, cumin, pulsing to combine. Finally, drizzle in the olive oil until the mixture emulsifies and is a uniform consistency. Taste and season with salt.
- Preheat your grill to 300°F (149°C), preparing for indirect grilling.
PRO TIP: Add soaked oak or mesquite wood chips to your smoker box or tray and place them over a lit burner for extra flavor when you slow-cook the steak. - When the grill is heated and ready, season the steak with freshly ground pepper and granulated garlic. Place the steaks onto the cooking grids that are over unlit burners. Use temperature probes to monitor the internal temperature of the steaks and cook them until they reach an internal temperature of around 120°F (49°C) for rare.
- When your steak is nearly there, prepare the Infrared Sizzle Zone sear station side burner by igniting it and heating it to high.
- When the steak reaches 120°F (49°C), remove it from the main grill and sear it over direct heat on the Sizzle Zone until grill marks form. This will bring your steak to medium rare.
- You can also sear your steak using the main grill head. Remove the steak from the grill when it reaches the correct internal temperature. Allow the steak to rest while you ignite all of the burners to high, heating the grill to 500°F (260°C). Sear the steak over direct heat.
- Once searing is done, rest your steak for at least 10 minutes before serving it with your favorite seasonal sides, and a drizzle of your fresh chermoula. Serve this with a Spanish Rioja or Mencia. For a beer pairing try, a Belgian Dubble, Casablanca Lager, or a Munich-style Dunkel.
