Mediterranean Style Grilled Swordfish

Mediterranean Style Grilled Swordfish

  • 2 to 4 Swordfish steaks
  • ¼ cup (40 g) salt
  • 3 cups (750 ml) water
  • Fresh oregano, rosemary, and/or thyme
  • ¼ cup (62½ ml) quality cooking olive oil
  • 1 lemon, zested and juiced
  • 1 clove garlic, grated

Greek Potatoes

  • 2 lbs (1 kg) Yukon gold potatoes
  • 2 tbsp. olive oil
  • ¼ cup (62.5 ml) vegetable or chicken broth
  • 1 lemon, zested and juiced
  • ½ tsp. dried oregano (1 tsp+ fresh)
  • 1 clove garlic, grated
  • Salt to taste
Method
  1. Start by shaping your steaks into medallions. Remove the spine and the belly membrane on the inside of the fish steak. Next, slice about halfway up between the flesh and the skin on one side of the fish. Fold the flap inwards, then wrap the opposite flap around it. Secure everything into the medallion shape by pulling the skin around the outside and tying it with butcher’s twine. Set aside.
  2. Preheat your grill to 400°F (200°C) preparing to use direct heat. Place a cast iron frying pan onto the cooking grids to preheat. 
    For the potatoes, peel and slice them into 1-inch (2.5 cm) cubes. Whisk together the oil, broth, lemon juice, oregano, salt, and garlic. Toss your potatoes in the ingredients that you just whisked together, then pour them into the hot cast iron pan. Grill over direct heat for 20 minutes.
  3. While waiting for your potatoes for 20 minutes, whisk together the salt and water until the salt dissolves. Place your swordfish steaks into the brine and allow them to soak until you flip the potatoes.
  4. In a bowl whisk together some chopped fresh herbs, oregano, rosemary, and/or thyme, along with the lemon juice and zest, and the olive oil. Tie a bundle of fresh herbs together.
  5. Once you have flipped the potatoes Cook them for another 25 minutes. Flipping periodically as needed.
  6. Remove the swordfish from the brine and thoroughly pat dry. Begin cooking the sea swordfish steaks over direct heat, brushing the olive oil and lemon mixture over them with the bundle of fresh herbs. Cook for a few minutes, flipping when the fish releases easily from the cooking grids and sear marks have formed. Continue brushing with the herbs and oil. Cook until the fish reaches an internal temperature of 145°F (63°C). You may need to remove it to indirect heat to finish.
  7. Serve this delicious recipe with your favorite seasonal side dishes, and a lovely glass of bright and acidic Picpoul de Pinet or Lebanese Merwah, or even a Pinot Grigio. For beer pairings, we suggest the pale pilsner from Southeast Asia - San Miguel, or Italy’s pale lager - Birra Moretti.
