Vegetarian Sweet Potato Burgers with Halloumi Recipe

With barbecue season upon us, everyone needs recipes that they can enjoy during your backyard barbecues. These Vegetarian Sweet Potato Burgers with Halloumi can be easily converted to a vegan recipe by omitting the cheese. Sweet potatoes are just that; sweet. They pair nicely with cinnamon and cayenne for a slightly spicy bite. Add to that some grilled halloumi and the salt and sweetness produce a harmony on the bun that is elevated by a sticky glaze. Top with your favorite greens, a creamy dressing,  avocado or tomato, and other condiments you love, for a vegetarian or vegan burger that the whole family can enjoy.

  • 3 medium (680 g) sweet potatoes
  • 1 clove garlic, minced
  • 1¼ cup (200 g) cashews, ground
  • 1 cup (100 g) panko
  • 1 tsp. cayenne
  • 1 tsp. cinnamon
  • Salt and pepper to taste
  • 1 package (200 g) halloumi cheese, sliced thin
  • Oil for grilling and greasing press
  • 4 buns for serving
  • Your favorite toppings for serving

Sticky Sweet Glaze

  • 1 tbsp. sesame oil
  • 1 tsp. cloves
  • 1 tsp. cinnamon
  • 1 tsp. pepper
  • 1 tsp. ginger
  • ¼ cup (59 ml) maple syrup
  • ¼ cup (59 ml) soy sauce
  • Sriracha to taste/optional
Method
  1. Peel and cube your sweet potatoes, then cook them in boiling water until just soft. 
  2. In a large bowl, mash the sweet potatoes, stopping before they become puree. Mix in the garlic, cashews, panko, cinnamon, cayenne, and season to taste with salt and pepper. Use an oiled burger press and form into thick patties. Place onto a parchment-lined plate or tray and chill for at least 15 minutes. 
  3. While waiting for the burgers to chill, combine the maple syrup, soy, spices, and optional sriracha and bring to a boil for a minute or two, until just beginning to thicken, then remove from heat and allow to thicken as the glaze cools. 
  4. After you have your sauce together, pull out your halloumi and slice it into ¼-inch thick slices. 
  5. Prepare your barbecue by removing the grids and replacing them with an enameled cast iron griddle. You can also use a cast iron frying pan or plancha surface instead. Preheat the barbecue to 450°F (232°C). 
  6. Oil the griddle and cook the burgers for 3 to 5 minutes per side, until crisp and warmed through, adding more oil as necessary. Move the burgers to the warming rack or main grids, re-oil the griddle, and cook the halloumi until crisp on both sides. Brush the burgers with a little of the sticky sauce while you cook the halloumi for an added kick of flavor.
  7. Assemble your vegetarian sweet potato burgers with your favorite toppings, then drizzle with the sweet, sticky glaze for a delicious, plant-based meal that the whole family will love.
