Ingredients
  • 2 lbs (454 g) ground beef
  • 1-wheel, double cream brie, sliced
  • salt and pepper to taste
  • buns
  • toppings

Pear Relish

  • ½ cup (125 ml) cider vinegar
  • 1 onion, minced
  • 4 pears, cored and diced
  • ½ cup (90 g) light brown sugar
  • 1 tsp. fresh ginger, grated
  • salt to taste
Method
  1. Using your Napoleon Gourmet Burger Press Kit, form the ice-cold meat into patties. Brush the interior of the press with cold water, fill it ⅓ of the way with meat, use the interior to press an indent into the burger, then fill that indent with slices of brie. Add a little more meat to the top and press the burger shut.
  2. Place the patties on a surface covered with waxed paper. After forming all the patties, put them in the fridge or freezer to set and rest for at least 30 minutes.
  3. While the burgers are resting, prepare the Pear Relish. In a small pot, combine the diced pear and onion with ¼ cup of apple cider vinegar. Bring to a simmer and cook for 10 minutes, stirring occasionally. Drain and discard any excess liquid.
  4. After draining, add the remaining ¼ cup of apple cider vinegar, the sugar, and ginger. Simmer for an additional 5 minutes.
Remove from heat and let cool to room temperature. Chill until ready to use.
  5. Preheat your grill to medium-high and grill the burgers over direct heat, seasoning to taste with salt and pepper. You can/should also toast the buns when the burgers are nearly done.
  6. Once cooked and rested, assemble your burgers with your favorite toppings, add a large dollop of your pear relish, and enjoy.
Serve these burgers with your favorite sides and a robust Chenin Blanc wine or try a Chocolate Stout or Porter if you wish for a beer pairing.
